    Agree,....Almost like cheating. I get off at 5 and live 10 mins from work. When i got off internal was 199. It was perfect timing!!

    Yes. Just shut it off. Once it went back down to 225 the temp never exceeded 235 again. Mostly stayed around 230. I consider that a success. I also agree that a huge piece of meat will help stabilize…
