I know some would say this is not possible but I am not sure if it is the brand of charcoal or what but I need some advice. It almost has too much of a smokey flavor. I am using lump charcoal that came in big grey bag from my dealer. They said it was the best you can use but everything almost tastes too smokey.
I did mine indirect and it came out great. It does make a whole lot of food @dweebs0r. I have the maple rub and have tried it on chicken without a lot of success. I was hoping it might give it a mountainy pancake taste possibly.
IT IS VERY GOOD WARMED UP! Even good cold believe it or not. LOL! Just a good all around dish.
This is something I had to learn with the egg. You have to give it time after the light regardless of how you light it to let the VOC's burn off. After you light it get it to temp, get it settled in and let it burn for about 15 -20 min. You will not get that overly smokey flavor.
