My bad- I've not been here for awhile. For the FOUR shoulder setup on the Large BGE, with the help of Ceramic Grill Store here's what I did (I should've taken a photo): Spider inverted (so it hung a little lower in the firebox) with the round stone, a flattened drip pan, then the BGE-supplied normal size cooking grid, then the adjustable rig, and on top of that, the grid extender with the oval grid up top. There was plenty of space between the basement and the attic levels to allow adequate air circulation. I did put a little foil around the furthest back shoulder in the basement so that the edge wouldn't burn too much as it was just above where the heat came up.
there were two shoulders on the first level and two on top (lid rubbed against one of the upper shoulders so I 'trimmed' it a little but it was a pretty big one. All bone-in,
left them alone for 18 hours at 210 degrees, salt, pepper and paprika dry rub. Shoulders came off PERFECT! easy shred, easy cook, lotsa people fed with spectacular results. I am not too creative, otherwise I'd diagram it here. I will try to remember to take a picture and post it here the next time I do it1
Hey, If you get this right away let me know what colour you want and I'll get them on order before I leave the office. They usually deliver within a few days. I just got an infared from them and it was really fast getting here.
Yes fire bricks will do and yes to the link on copper elbows. When baking or doing pizza the higher in the dome the better. Make sure the thermometer doesn't hit anything high in the dome, you could bent the thermometer and if it is touching anything the temp is not correct.
