    Thanks for the help. This was the first one that a slow cook didn't turn out and I guess I just lost patience. Next time I'll get a smaller brisket and get an earlier start. If it gets done early I'll wrap it in foil and towels and keep it in the cooler to rest. Do you use a dry rub or just salt and pepper?
