We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer.     Everyone seems to have their own idea of self basting.  One has to keep in mind that kamados in Asia were not used for barbecue.  That only occurred after returning service men stations in post war Japan brought some back and found a new method to use them (instead of preparing rice dishes).  From what I've seen over the years in professional pithouses and competition circles, a lot of the best rigs had motorized self basting rotisseries.  Think old drover roasts.  Roasting and rotissering is not the same.
