Hey Hillbilly: Thanks for your comment on my problem regarding the burnt brisket. You're discussion on the thermometer made me suspicious so I checked the "egg-thermometer" and it was off by 35 deg F in the egg and 25 deg F in boiling water. (can't explain the 10 deg but no matter).
Apparently just because that thermometer was calibrated last year, doesn't mean it's still accurate today.
