    there are alternative methods called UMAi Drybagsteak process. If I posted on this forum I'll get ripped! It uses a special "plastic-like" vacuumed sealed bag that keeps peace in the family when SWMBO can't stand the thought or view of a raw 8 to 14 pound chunk of $100 to $150 piece of raw meat resting in the bottom of "her" refrig for 30 to 45 days. It's also effective for people with small children who can reach the bottom shelf and touch that raw meat after "touching whatever" if you get my drift!
