This was a lot of fun and really shows how versatile the Egg really is. I am sure there will be a couple of Eggs Benedict entries. This was done all on the Egg including smoking the peameal bacon, baking fresh english muffins and preparing the hollandaise sauce.

Some pics

Started with some peameal bacon

Had a nice surprise...first snow

Used the DO lid for the giddle

Next, prepared the hollandaise

Then the eggs went on with the other stuff toasting up

The final product.

This was the first time my wife has had this dish and she was very impressed. I have to say the hollandaise really turned out well.
Again, this was a lot fun and look forward to all the entries.

Thanks for looking

Shane

Very delicious looking! I'm not familiar with peameal bacon - can you tell me about it?

Peameal bacon is a pork loin that has been cured and rolled in cornmeal(peameal).
These turn out great on the Egg :)
