Spicy Venison Burgers

Sitting at work today I had a huge burger craving ... that is now history after making these spicy venison burgers! Mixed in a few simple seasonings and a whole jalapeno with seeds and membrane. Added a few sliced and toasted peppers on top ... added smoked turkey bacon (step 1 in this meal) and served up with sweet potato wedges ..... came out great, satisfied the craving!

Plated with the smoked turkey bacon which was smoked prior to the burgers going on.

Looks like some alternate pork or beef fat in your burger mix? I usually have at least 40lbs of ground venison to use every year and I end up making a ton of sausage, etc. Don't do too many burgers as the straight venison is too lean. Curious to know how much and what type of fat you add for burgers o

A friend of mine gets me the venison for CHEAP! His father processes it so I don't know how much pork is cut in, but it really isn't that much. We have about 15 lbs of pure venison ready to be turned into sausage, I just haven't figured out what I'd like to make yet!

I end up doing more summer sausage than anything else with our venison. Here is a post from last winter that I did. I've also done a bunch of other brats/italian sausage using seasoning kits from that same company (LEM) All turned out really well
