was the skin crispy? I plan to try a duck on the Egg in the next few weeks, and some recipes claim the duck skin should be dried with a fan prior to cooking.

As fun to chase as any. Small and fast -Not really that fast, Pheasants are faster- still much easier than hittin Grouse in the woods tho.

I use corn or potato starch on poultry skin and it always comes out crispy. Thanks

Granulated garlic and pepper, marinated an hour in balsamic and olive oil. Raised grid direct about 350* about thirty minutes.
