Crunchy nuggets of joy & happiness

Origin: my wife & I were sitting in the hut on Wednesday evening enjoying some beverages while the egg was cooking our dinner. Usually we munch on chips & salsa or pretzels, but when I asked if we had any, she said no. I said we need some crunchy nuggets of joy & happiness always under these circumstances, then thought I would make some, so this is an idea that was actually named before it was created. I then thought what would really fit that description, & the obvious choice was mini bite-sized walnut rolled red eye maple pork nuggets, followed about 30 seconds later by a tropical selection, coconut rolled pineapple almond ground chicken thigh nuggets. So, here they are:
the stuff for the tropical nuggets:
grind up some thighs, and yes, the almonds are ground right on in there:
notice the change in color from chicken to nut:
there is an additional whole nut in the center, for elevated crunchositude :huh: :
the stuff for the pork nuggets:
all done & ready to go to the egg:
finished up & ready for dippage in various sauces:

thank you Julia, & they tasted much like they look, really good, I went with duck sauce as a dipping sauce for the coconut chicken ones, turns out that worked for the pork too... littlelip did some bacon wrapped dates & we're having burgers too, so these were just sort of an experimenthappy in the hut

I never thought of grinding nuts in with the meat. Cool idea with many possibilities.

Faith, I never thought of it either, till I had a few too many almonds, & wanted to clean the grinder out (I usually chase the meat with an onion to push all the meat out... but didn't have one...), so the nuts served a duel purpose, was kinda cool too, funny how these things happenhappy in the hut
