Like many other eggers, I did a couple Pork Butts for the big game today. Unlike others, these were my first.

Overall, with lots of reading here, a decent amount of prep, and a little luck the Butts turned out pretty close to perfect.

Here's my setup:
- Plate setter down
- Drip pan on plate setter with 2in of water
- Grid on top of all
- Maverick ET-73 setup to check temp at grid level and in the smallest Butt
- Two 7lb Costco Boneless Pork Shoulders, rubbed with mustard and Lillie's Carolina Dirt
- Started at 250 dome, but ended up at 300 dome to speed things up at the end
- Total cook time 17.5 hrs
- Wrapped in foil then in towels and then in the cooler for about 90 mins
- Pulled with two forks and it just fell apart with decent bark too
- Served with Lillie's sauces (smoky, carolina, and tangy)
