Like many other eggers, I did a couple Pork Butts for the big game today. Unlike others, these were my first.
Overall, with lots of reading here, a decent amount of prep, and a little luck the Butts turned out pretty close to perfect.
Here's my setup:
- Plate setter down
- Drip pan on plate setter with 2in of water
- Grid on top of all
- Maverick ET-73 setup to check temp at grid level and in the smallest Butt
- Two 7lb Costco Boneless Pork Shoulders, rubbed with mustard and Lillie's Carolina Dirt
- Started at 250 dome, but ended up at 300 dome to speed things up at the end
- Total cook time 17.5 hrs
- Wrapped in foil then in towels and then in the cooler for about 90 mins
- Pulled with two forks and it just fell apart with decent bark too
- Served with Lillie's sauces (smoky, carolina, and tangy)

You look like you handled that the same way the Saints handled the game. Good job for your first time.

Bryan, I'm going to be in Destin the first part of June. I think I'm going to have to stop by the store.
