What temp and time line should I follow? The chicken is marinating in Italian dressing with some San Antonio Red chile mixed in. I will drain and use a paper towel to remove excess marinade and then season both sides with my own rub. I will be using apple wood splits and cooking indirect. Thanks for your help.

Can I talk you in to direct on a raised grid at 400 until the thigh temp measures 185?
If you want to go indirect, put a drip pan underneath and fill with some veggies to cook in the chicken fat. 350 to 400.

Great idea about the veggies but for this cook I will not be using veggies. About how long would you guess till it reaches 185. I was thinking about 50 minutes at 325-350 indirect. Thoughts???

Porky, I'm with Frank (direct, raised grid, 400'ish). 50 mins is a good estimate, but make sure to check temp to be sure.

50 minutes should be about right. Take their temp to be sure.

When you say raised grid do you mean to put the grate on top of the fire ring or higher via a second tier, I have one of these?
