Weekend spares

I had 3 racks of spares that needed cooking this weekend. I wanted to keep from cutting them but was short on time (7:00 Bama kickoff) and grill space (medium only for now). So I cut em up STL style and put them bone to bone on the inverted v-rack indirect. Was in a real hurry so I didn't take the time to wrap the platesetter (what a mess but I'll burn it off with a pizza cook this week). 6 hrs or so on the smoke at 240 or so with cherry wood and finished with an SBR glaze. I'm getting closer Frank!

They look great! By the way, if you sit a drip pan on top of your plate setter you won't have to foil the plate setter, and there will be essentially no mess.

I haven't laid one across the top of the rack like that - nice.
For my medium I'm putting together a grid extender just so I won't have to cut up my spares. Got the extra grid just waiting to get to the hardwae store and purchace the stainless steel hardware.

Yeah I just laid them like that for the pic. I had it down in the v-rack for the cook. Bill I can't wait to get a large! I already have half of the money saved up.
