Chicken wings Direct or indirect ?

I am about to light the EGG to do chicken wings. I have done them before (2x). One time direct and the other indirect. Both were good but it never hurts to get others' opinion. If I were to do indirect I could put a drip pan with fingerling potatoes underneath.

Any opinions will be helpful.

My favorite way to do them is direct at 375-400* on a raised grid with only enough lump to do the cook. The idea is to keep the wings as far from the lump as possible. Cooking them this way takes about 45 minutes.

You can do them indirect as well, but even using a drip pan if you cook them at high temps you will likely get some foul smoke and possibly even a small grease fire when you open to flip, sauce, or remove the wings. If you go indirect, keep it under 300*, but it will take 90 minutes or longer to get them done and they won't be as crisp as if done using the direct raised method.

I also like to cook mine to a finish, them remove to a large bowl, toss them in whatever finishing sauce I am using, them spread them back on the grid for about 5 minutes. Sometimes I will give one final toss in the sauce prior to serving.

Either way works for me. This is my new direct wing basket. Cooks at 350-375 in 40 mins on raised grill.

Here is my indirect cook. Here I can do 10 lbs but I do these at a lower temp for a longer time.

I love to use the wing rack - cook just like Fidel, 45 mins direct around 400:

Then I pull them, crisp them a few minutes a side directly on the grid before saucing and finishing:

Here is the link to the rack sold on Amazon, but I have seen these cheaper at Lowe's, Ace Hardware, and sometimes you can find at Home Depot. Should be more like 10-15 bucks...good luck!

Holy smokes, I only paid $6.00ea for the same thing. They are made by Bayou Classic and are all stainless. I would check Academy Sports I think they carry Bayou classic stuff.

I have some tweeking to do in order to get my wings to where I want them. Not sure how much the steaming helped but it didnt hurt. They were actually pretty damn good though. Better than last week at Dougs. I have two months to figure it out.
