Day 3 of Egg obsession and today I decided to try spare ribs. Had a bit of trouble 'dialing in' a low temp since other meals have been higher heat/quick cooking, but after one failed attempt where I finally just closed the lid and let it cool off I went back and found the correct way to sneak up on the temp...been dialed in on 230 - 250 for the past 3 1/2 hours.
I separated the ribs since hubby likes a hot/spicy rub and I don't and added some apple chips and Jack Daniels chips mixed into the lump. Have about another hour for the small pieces and at least two hours more for the big slab. Add in the ABTs and some baked beans and we're good to go!

What I'm figuring - in my whole 3 days of cooking on the Egg - is that if you know how to cook, then it's just a matter of learning how to cook on a new tool...and it's hands-down the most fun tool I've ever cooked on! -
