i fired my new egg up last night for the first time! played with the air flow and it stayed between 400 and 500 degrees. even if i shut the top wheel completly. i'm cooking tenderloin tonight so i need to have it lower any help?

Don't let it get that high. The ceramics hold the heat and it takes a long time to come down.
Catch your target temp on the way up and you'll be fine. -
If you want to cook at a lower temperature, the best thing to do is to not let the cooker get hotter than your desired temperature to begin with. As your cooker heats up, start closing the vents and slowing the fire until you get to where you want it. Cooking an Egg takes more time than heating it up. Good luck!The Naked Whiz

thats what i did wrong thanks for the help. i noticed when i shut it down last night it took forever to cool off. i cant wait to begin the egg journey.

There are essentially two ways to start a fire, depending on whether you are going hot or low&slow. Naked Whiz has good info in his site about this.
The two methods are basically "top down" and "bottom up". Top down is used for low&slow; bottom up for hot fires. Look at the references Grandpas Grub listed ant they will show you how.
For anything other than wide open you always want to sneak up to your target temp. It is way easier for the Egg to get hotter than to cool it down.
