Sticking with my seafood diet.
Used the same stuffing for my Prawns.
Remember these? HAHAHAHAHAHA
Stuffed some Talapia.
Quickly browned in some butter.
Took the CI skillet out and put the plate setter in to finish baking. Plated and ready.

Too close to lunch time for me to be here. Looks like a fun cook. Did you ever get with Little Chef and post the recipe?LBGE Katy (Houston) TX

Intresting you posted that Mike, I was just thinking of doing a similar dish "Catfish a la Louisiane" with crab and scallions. looks great! Did you marinate the fish in anything before? The Catfish recipe I use calls for an Itallian Marinade.

It is still in the test kitchen. :woohoo: If you want, send me an e-mail and you can give it a try.

Thanks.
No, but I did add Swamp Venom to the inside of the fish before stuffing. Then dredged in buttermilk and coating. Then browned.

Thanks Chris. I doubt that retirement lasts very long.

Thanks. You are staying for the after party in OKC right?

Mike,
Lookin good. I have come to the conclusion that not only are you the rib master, but the seafood king as well.
I love grillin' shrimp, but I always wondered as to what temp you baked those at. -
Thanks Anthony. Wish you and Karen was going to be in OKC. Breaking out some scallops at the after party.
When I bake, usually around 400-450 with a slightly elevated grid.
