Three Amigos & Cowboy Rib Eyes

2" Rib Eyes arrived a bit frozen...so we hot tubed them for an hour....... gave me time to put the egg up to 700 F
Rubbed them with Cow Lick..........
High searing time.....fire...fire....fire 1.5 min/side
Rib Eyes out for 20 minutes...Egg down to 400 F.....hickory wood chunks in...
Back on the egg for 6 min./side...and voilá...is that Faustino I???....
Ready......5 min. wait to redistribute the juices...
Faustino I definitely showed up........
Guacamole squeeze......the large plate looks small
...The moment we were waiting for....a perfect medium rare........130 F internal
A good reason for the three amigos to celebrate.... :woohoo:
Dessert by the fire......yes it's cold for us... :laugh: :laugh: :laugh: ........ :P

Woke up a bit early this morning b4 work so doing a quick forum check. NOW THATS SOME RIBEYES!! Gerat job on them also. You sid they arrived a bit frozen. Where they come from? Really is cold hear. 21 degrees and my part of Ark. just dodged the icestorm. Will be a cold ride this morning! Keep you fire lit. Im sure you need it there. Got to be down in the mid 60's there last night!! :laugh:

I've said it a million times... I absolutely love your pictures. The food and the scenery look fantastic!!! I need to live there! I must admit, I took some satisfaction seeing that at least you had to where a light jacket, and it's not 80 degrees there all the time :P .
I have to ask, what do you do for work? Whatever it is, it's helped provide you with an absolutely beautiful home. -
Great cook and nice photo's Beli. We got some of the ice storm, pretty nasty traveling. I enjoy reading your posts. I've only been to MX twice but I really enjoyed it.

Those sides of a cow you call a "Rib Eye" or the beautiful place that you call home. You just convinced me to have a rib eye tomorrow night. -

Thanks a lot buddy.. I get really involved when taking my photos....in the cook one of my friends had to remind me that the camera lens cood melt.. :laugh: I kept the camera so close to the 700 F fire... :ohmy: ..easier taking photos from a distance & using the telephoto but I get carried away by the fire & the aroma I suppose......my work?? just a simple rubbish colector & recYcler.. -

I feel embarassed to answer.....3 bottles... ...2 Faustino I Rioja & 1 Merlot Véneto...plus industrial quantities of whiskey & rum :unsure: ...dessert was assorted cow's milk candies...tell the girls at the office that I don't do this very often......only about every week :laugh: :laugh: -

they were big...first time I actually hot tubed them being partially frozen... loved the result...& choco...our labrador was probably the happyest.....you know..after so much spirits flowing around I forgot to close the main gate to our property.....and it stayed open all night :pinch: .....Loren found choco this morning keeping watch by the gate.....grateful dog.. :P -
like most social gatherings organized at the last minute...great!!!! no time to worry....

You have inspired me.....I have some 1.75" rib eyes rubbed with EVVO and Cow Lick wrapped up in the fridge. Can't wait to throw those bad boys on the BGE. Took me 3 cooks to comfy on the BGE for steaks....I'm rockin and rollin now.
Ribs tomorrow. Need more practice here.

Can´t go wrong with 1..5" + rib eyes on the egg........good luck and send some pics....the wine is Rioja & I seem to have a palate for anything Rioja,, :laugh: strongly recommend it
