I learned today to never try and cook a turkey on a day your wife wants to shop at IKEA.

I put a turkey on at 11 a.m. Wife wanted to go to IKEA. I waited a half hour wanted to make sure the temp would hold at 325º. Thought we would be gone 2-3 hours at the longest.

Well 7 hours later I return to 198º turkey. Very dry. (Egg was still holding a temp of 325º) (Glad I was making Mad Max Gravy.)
