Country ribs on the Mini at 250?

I'm going to try some country ribs on the Mini. I have a foil pan under the grill (sorta indirect) and will try and hold the heat to 250 for a couple hours. I'm still seaching what to do after that. Wish me luck.

I think the longest for me is about 3 hrs and had to stock or stir ,boy I sure like my mini

I love my Mini, of course it's the only one I own.
Hoping to have a large very soon. While i'm waiting for the mini to stabilize at 250 I added foil under my grill.

Ribs are on the grill and the clock is ticking. Hope they shrink a little cause it tight in there!

Looks great. Envy your lifestyle but love my eggs at home. If your RV'ing takes you to Fl. look me up. I'll make sure we have at least 1 EGG apiece for cooking.

Well the ribs were done in a little over 1½ hours at 250. The internal was 175 so I pulled them. We served them with Oriental Cabbage Salad and Spicy Jalapeño Corn Bread.
With the exception of the corn bread everything was delicious. I had to slather Jalapeño jelly on the corn bread to get a piece down, threw the rest away.
I used Stubb’s Spice Rub on this batch. I ordered a bunch of Dizzy Pig rubs today and can’t wait to try them on the next patch of ribs.

I'm game, I made bread on my Weber in MI this summer and it turned out good. I can't wait to do Pizzas!
