IMHO Bison is way over looked. Not hard to get for me but hard to get any one to eat it but me. :ohmy:

Looks great! I'm a recent Bison convert. No affiliation, but I buy from buffalogal dot com. The owner is a class act.
I like the fact that the animals are raised humanely and mostly hay and grass fed. That makes a healthier product for us to eat. They are really low fat too. The secret is not to overcook them. -
One of the few varmin I have not digested yet! :laugh: What does a lb of that go for and is it cut with anything? By cut I mean we add beef fat to deer meat making hamburger to help hold it togeather and add moisture.

I've had Bison and Beefalo and liked it. Never had stilton on a burger. How did that work? -
We like them topped with a mixture of 2 parts crumbled low-fat feta cheese and 1 part olive tapenade after grilling, served on grilled ciabatta rolls (or slices of grilled ciabatta bread if you can't find rolls) for a yummy Mediterranean burger.
I shape the burger to match the square roll or oval bread slice so there's goodness in every bite, even if that means the burgers are 1/2 lb each

I just ordered the "Overstock special" and a package of bison polish sausage. What a great idea and a great post, I have been itching to find something new to EGG, and am a big fan of the bison!!
