I would save the alder for doing fish and instead use some apple & cherry with the bird. I wash and pat dry my bird and then spray the inside with EVOO and sprinkle rub inside and then set it on the stand and do the outside of the bird the same way. Rub it down with some really good EVOO (extra virgin olive oil) and apply the rub and let set for an hour or so and then onto the BGE at about 300 degrees.
