Temp still too high

How can I get the temp down? It is still at 350.. and I've been trying to get it down for about an hour now. I have the bottom open about 1/4", and the top about 1/2". Should I just put the butt on now?[p]Help!

I wouldn't put the butt on yet. Do you have your plate setter in? That might lower it a little.[p]Mike

Haven't put the plate setter or the water pan in yet.. should I just do that? I've got it going great at 350.. LOL

Those vent settings would pretty much give me a 350° dome on my large...for 250° close the top slider, leaving the daisies open and close the bottom vent to about the thickness of a nickel...this assuming your using a large egg...[p]Wess

Get your settings like Wess said and just walk away until its time to put the butts on. If the temp is still high, the cold meat will bring it down. -RP

It is a large.. I just put the plate setter/drip pan in and it took it down to 200. Will do as you suggest after I get the butt on.[p]Thanks![p]Lisa

In the future you will want to put your platesetter in when you light the fire....and you may want to wait a little bit before putting the butt on....the egg is going to stay hot for a good while.[p]Wess
