Spatchcock chicken- 350F direct 350 10-15 minutes skin down, indirect 350 skin up 45-60 minutes breast 160-165. Careful not to dry it out.

He's asking for an indirect cook with the plate setter, I think. Anything with a drip pan would work. A turkey breast might be a good indirect cook with the plate setter and a drip pan.[p]TNW

I think ribs and chicken are two of the best/easiest.[p]Chicken (or chicken parts) is a quicker cook than ribs.

Beer can chicken is one of my favorite and relatively easy. I've cooked them from 250-300 until temp. I put my setter in with feet up, drip pan then put grid on and put can/chicken on grid over the pan. Add a bit of liquid if the drippings begin to burn. good luck.
