    That'll work. I assume you're going to put a pizza stone or steel on top of that grid? You really don't need the grid.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    You've got different options for heights with that setup. Experiment to get it like you want for the dough and toppings you are using in order to get it perfect. I use a different setup for different styles of pizza I cook.

    You might want a third fire brick to enhance the stability of the top level. Don't know though.
