First try at fresh pizza dough

Here's my first try at home madthe pizza dough.
00 flour, active yeast and little water.
Dough is sitting in a bowl now covered with Saran Wrap in the refrigerator until dinner tomorrow night..

I just scored a 55 lb sack of Italian tipo 00 from RD for $28. It's in my trunk with a rip in the side. Need to figure out where to store it now....
Anyway, looks good!
I have a mini-scale with a resolution of 0.01g that I use for salt and yeast. They're about $12 at harbor freight. They usually think you're selling drugs when you buy them, ignore the fools.

I haven't mastered the peel and slide yet. So i build my pizzas on parchment paper and slid it on stone. After 1-2 min I pulled the paper out and let the pizza cook. Was able to cook 2'pies at once this way. Delicious!!!

That's a freaking steal! Next time I will stop there for some. Paid way more than that for my last two 55# bags.Just a hack that makes some $hitty BBQ.... -

I have learned not to worry about the parchment paper. the edges will burn, now I trim them close to the pizza. you need to learn hand stretching over rolling.
