Cruising along nicely

I've only done 1 chuck roast and it was great. Like others have said, go to 160 and wrap in a foil pan with broth or whatever, dark beer is probably delicious. The next chuck I plan on doing all burnt ends with. They look delicious! Egg on!I'm in Fredericksburg, VA, and I have an XL and a medium.

@StillH2OEgger - In the event he cannot surface this late PM I will tell you that pulled beef beats the pork cousin every time. (Same with the ribs deal). But I have been convinced by many years of cooking both. Just an opinion and we all know what those are worth...Louisville; Rolling smoke in the neighbourhood. # 38 for the win.
