im having a bunch of people over for my dad's birthday on the third. I have a 15.8 lb whole ribeye to cook. What would be the easiest & most efficient way to do it? I was thinking low at about 250 for a few hours. Any suggestions?

that's what i do. no reverse, no sear first. just low and slow.
if you can dry it a couple days that will help the fat/crust

I made our last 3 Christmas dinners using this recipe and have always had outstanding results. http://amazingribs.com/recipes/beef/prime_rib_roast.html. This guy explains every step in detail. The condensed version is: 225 indirect to internal temp around 115 then sear.

I just cooked a 4 bone 6# one last week. Made sure the bones are cut away from the roast. sprinkled with black pepper, garlic powder and a little salt, between the bones. re tied it and placed some fresh rosemary twigs on top under the ,garlic powder salt, little water. Rubbed the slurry on top, placed indirect with a drip pan and some water and red wine underneath and placed in large @ 425F for 30 minutes, Shut BGE down to 325 leaving the roast in and let cook about 15-17 minute/pounds until internal as measured with Thermapen is 120-125 or a little higher is you prefer. Remove and let rest This roast will creep up 5-8 degrees F. made a horseradish sauce with sour cream, horseradish and mayo little lemon juice and black pepper Happy 4th. I use the bones to make beef barley soup with some orzo if you do not like barley.

I just wanted to say thanks for all of the advice y'all gave me. He roast turned out amazing. I rubbed with s&p and smoked at 275 for a little over 3 hours. It's one of the easiest & best things I've smoked.
