don't bother with lean meat.
you need 85/15 or so.[p]and don't work the patty too much[p]also, if you can't get the spatula under it to flip it, it isn't ready to flip.

Good points, I'd add buy it fresh. Hamburgers seem to patty better for me when the meat is from the store and not the freezer.......probably comes to the store frozen too...I can't explain it just my observation.
