The kids at G'Mas

With kids gone for the evening decided to do some steaks. Went to SAMs to pick up some T-bones but, they had NY strips on sale. They only had 4 packs left so I went for a few with that(a few lunches during the week).  Only did lump on half the xl(towards the front) and put the beef on the back side of a raised grate to begin with. Used the new  Therapen MK4 to make sure they were on the right tack. A little bit of oak and they were amazing.

    They look great!  Last week I did 4 small ones on the spider with the 13" CI for a fwd sear then dropped the standard grate on above. Set the strips on the extreme edge for just a few mins and pulled them off. ( my thermapen was on loan to my boss). They ended a hair north of med. rare but tasty.  Prep was patting them dry and just Montreal steak seasoning.

    The great thing about my SAMs club is everything is at least 1" thick. After 25 minutes on the back I removed and did a reverse sear. The lady really only like medium but she ate this steak like they are going to outlaw it tomorrow. I might be able to make to teach her! Haha

    Great food! Great pics! On thing though, that red thing in the first picture looks real real fast, be careful!

    How is the Mk4?  Did you have another Thermapen to compare it to?

    Just counted @sardonicus.  They are all still in the lockbox.  Looks like I better watch out cause it's the plate I'm telling ya!

    I really like the MK4. Had a Thermapop. To me it's a huge difference.
