Pork shoulder cooking question..................

Cooking indirect at 250 dome temp, about how long does it take to cook a five pound shoulder until it reaches 190 internal temp???

should be 10 hours or so, maybe a bit less

Remember about 2 hrs a pound

I have done three pork butts, each between 6 and 8 pounds. I think about 16 hours is what they took, as I recall, even the 6 pounder. I would figure on 2 hours/pound plus a couple of hours, then if it is ready early, put it in foil and towels in an ice chest until you are ready to serve it.
