Gotta trim it ,soak in Dr Pepper and then season and cook for a long time. Wallyworld $2.96 per pound select grade I'm sure. How long for a 14lber to cook?

Is it 14 pounds now? You'll lose considerable weight when you trim it up. That said, it is not really possible to say how long it'll take, even if we knew what temp you are cooking it at. The rule of thumb is 1.5 hours per pound, but it can take way less or way more. The stall can be an hour or several hours. I would plan for it to take longer than shorter because you can always FTC and also gives you the time to make burnt ends! Enjoy the cook and post it.Toronto ON

It's almost 11pm and brisket will be going on soon to eat tomorrow afternoon

11:30 and we are cooking I need to calibrate my dome thermometer a little closer to correct its about 50 degrees off thermaq
-
06:30 it was a little hot so I had to choke it back a bit. Internal 182 degrees, not too much longer
-
Was your dome temp reading 50* above your probe at the cooking grate? If so, some difference in normal. Mine usually runs about 30* lower at the grate until after some time in the cook, it begins to rise to meet the dome temp.
If you are going to adjust the dome temp gauge, put it in boiling water, I would not adjust it to match the probe temp at the grate.
182* temp is probably in the stall. If it sits there for a while without raising, don't worry...normal procedure...just wait it out.
Post finished pics for us to drool over !!!!!!! Happy 4th !

It's probably not out of calibration. I've got both eggs going now and the dome temps are way above the grate temp. I just calibrated both thermometers last week. Temps fluctuate throughout the cook. Pull your dome thermometer if it bugs you too much.
