Tri-Tip

Tri-Tip was an obscure cut to me prior to getting a LBGE and reading the posts here on this forum, it has become one of my favorite cuts and cooks. I picked up a couple of Prime Tri-Tips from a local butcher, covered one in Holy Cow and the other with Dizzy Dust Coarse, on the egg indirect at 250* for about an hour until they hit 120* IT then threw them on a 600* CI to give them a nice crust. It was delicious...

I've cooked plenty of tri tips, but never a a Prime. Yours looks like it's cooked to perfection.
Any road will take you there if you don't know where you're going.

I tried cooking tri tip once but I cooked it direct like a steak, seems I got it all wrong! I need to try doing one this way. Looks delicious!
