First Cook on the Egg

Hello all! This is my first post as an official egghead. I have been lurking these pages since the idea of owning an egg was just a far-fetched hope.
We finally got a large egg on the 18th of this month (@Ekuapa was nice enough to document the moment and post about it last week) but due to work/weather/circumstance we were unable to break it in....until this weekend!
Under @ekuapa 's guidance we decided to make a low and slow cook the inaugural meal:

We put it in the egg on Saturday night and estimated a 12-14 hour cook time to have it ready for Sunday lunch. We monitored the pork butt throughout the night and were tempted throughout the morning by the smell of the meat; below is what turned out:



Overall, we were very happy with the turnout. We made one or two mistakes but are already scheming on what to make next.

@Thatgrimguy , my previous smoker was @ekuapa 's egg. I didn't post it but our previous "grill" was a $20 grill from Big Lots.....

Whatever the mistakes they must be very minor as that pork looks spot on. Welcome and great first cook!

@johnkitchens We over-salted/salted too early and the butt lost a lot of the its juices before cooking. We had to re-hydrate it with an apple cider vinegar concoction.

@EndermannCongrats and nice first cook. If you are near memphis you should check out Memphis BBQ supply on stage rd near wolf chase. They are a primo dealer but sell Rockwood and have a nice wood chunk/chip/split selection.

Funny background to a good looking first cook on your own egg. The pictures show it off as a "good cook." As to the mistakes ... perfect is boring, where as some minor corrections keep you excited about the next cook.

Congrats on the first cook and it looks marvelous. The only thing I see that you don't really have to do is put mustard on the fat cap. It will save a little time and it's not going get through the fat layer during cooking, but from the photos it looks good to me.
