ditto. 250 for 3.5 hrs for babybacks, 250 for 5-6 trimmed spares.[p]don't boil those poor ribs; what'd they ever do to you? :0)

Burf Wilson,OMG you may have committed the unforgiveable sin. The mere mention of boiling ribs is grounds for immediate suspension from the bar-b-que club. Get down or your knees man and pray for forgiveness.

Cook as recommended by Porkchop. If you want fall-off-the-bone tender then add an additonal hour in foil. Wrap each rack individually in foil and put them back on indirect heat for an hour or so.[p]Brian

Burf Wilson, I use the 3-1-1 1/2 method at 250*. Indirect for 3 hrs. Wrap in foil for 1 hr. Remove from foil and back on for 1 1/2 hr. I sauce them in the last 1/2 hr. This is for baby backs as I rarely cook spares, I just prefer baby backs. Never have tough ribs, Jim.

I usually smoke them for about 4 hours or so....hmmm never tried the almimunm foil method....maybe i will??? I think its the chip;s i am using...not sure...alderwood.[p]maybe the butcher is getting me a bad hunk of beef to work with...[p]Also you guy's can thank my mom and my dad for my name!
