Chicken Enchilada soup

Spatched a chicken, seasoned with Dizzy's Fajita-ish and threw on the egg with pecan wood raised direct. Shredded the chicken and made some enchilada soup for supper.

Here's a couple of plated/bowled pics... My 1st bowl and then my 2nd bowl. Bowl #1 had salsa, sour cream, cheddar, and chips on top. Bowl #2 had cheddar and Franks.

@henapple here is the recipe i started with...... http://www.food.com/recipe/tsr-version-of-chilis-chicken-enchilada-soup-by-todd-wilbur-58976 I added a can of Rotel, only used about 12-13 ounces of the velveeta, and I used all the shredded chicken. You have to stir the soup a lot or the velveeta will stick. It was good and I'll do it again. Probably dump in a small can or two of green chiles next time.
