make ahead snacks for the 4th

I've been invited to a 4th party and asked to bring "snacks". I'd like to do somethings on the egg, but they will need to be made ahead and eaten cold. I'd appreciate any suggestions/recipes you may have.

@PNWFoodie .... Spatchcock a chicken but use heavy smoke. Much more than if you were eating the chicken by itself. Chop or process the chicken and use any recipe you like.

I usually use grapes but hold off of the pecans due to allergies folks might have. The smoke flavor of the chicken is the star. My family like mayo, s&p and celery.Green egg, dead animal and alcohol. The "Boro".. TN -

@henapple This chicken salad sounds interesting. How do you serve it? Tortilla chips? Stuffed in cherry tomatoes? Bread bowl? Do you think I can get away with apricots rather than peaches (I have apricots on hand).XL, JR, and more accessories than anyone would ever need near Olympia, WA

I'd go indirect at 400 for more smoke time but either way... I use chunks and not chipsGreen egg, dead animal and alcohol. The "Boro".. TN
