MANY TIMES, USED ITAILIAN SALAD DRESSING OR GREEK SEASONING. please excuse me as i didnt notice the caps lock.

JWITHELD,[p]Thanks- I saw a couple of posts in the archives. I am going to try to cook at about 250 for 2 hours. I am wondering two things:
1. Cook skin side up or down?
2. Put directly on grate or on aluminum foil?[p]Anyone's help would be appreciated. Wife has been sick and want to present her with a good meal to make her feel better.

250 for a couple of hours is good, butterfly the mullet,rub with Everglades Heat or whatever hot rub you have, and cook skin (with scales) down directly on the grate. - it don't git no better.....enjoy.
