We are having a Paella Party tonight. Keeping it fairly simple with a Egg Roasted Salsa for the app and Chicken/Shrimp Paella. The morning started off with prepping for the salsa

Smoking it up on the small

Letting it cool and removing skins before going into the food processor

It turned out a little darker than expected but had a great flavor

All the paella fixing are prepped and I am enjoying a cold one while waiting to fire up the egg. Stay tuned for the rest of the eggin

Actually I will call someday. The house I am in isn't worth the powder and lead to blow it up. One of the rentals I own would look great with granite. If I decide to move in granite it will get. That said I really like those countertops!

Simmer down @henapple you gotta have some patience!!! Everything turned out eggcelent No pics of the chicken and shrimp getting happy cause you all have seen that. Here is the sofrito reducing

And after a few minutes of silence the clean plates

This was by far the best paella I have cooked. Don't know what it is about paella but I still get nervous as sh$t right before it hit the egg. Tonight was the first night I did it for company,my buddy was watching as I was cooking which was fun. The really fun part was I loaded up all the pockets in my shorts with beers and found out from starting to cook to finish was a 5 beer cook.
