1st try with the A-Maze-N smoker

Got this thing in the mail yesterday and just had to try it out. I have 8 ounces each of medium cheddar, Gouda, and mozzarella. Plan to let it smoke about 2 hours. At 30 minutes in I plan to throw on some boiled eggs and let them go for 90 minutes and then make deviled eggs. Thanks to @fletcherflam for that idea. I'm using a hickory and cherry mix.

How long do you guys let the cheese sit in vacuum seal before eating?
