Cold smoking salami

New to this forum, Can anyone suggest what type of wood pellets( l have Apple, Mesquite, Hickory and Jack Daniels. Bbq Delight brand of pellets) should l use to cold smoke Salami on the BGE and how long should l smoke it for?

    What kind of spicing in the salami?  I have always used Hickory for summer sausage and snack sticks but if your salami is like a polish type or something I could see fruit wood like apple or cherry.
