Trial Cook for Eggtoberfest--Cast Iron Skillet Shrimp and Grits

I have made this previously in oven, and am adapting for Egg to cook next weekend at Eggtoberfest. Started with some of the raws pictured here--diced onions, cooked and crumbled bacon, yellow grits, garlic, diced chipolte chilies, eggs, cream, water,and shrimp:image

 

 

 

Cooked the onions in bacon grease, added chipoltes and garlic, then water and cream and brought to a boil:

Whisked in grits and cooked for 12 minutes or so:

Then, off heat added eggs, bacon, chopped scallions, and part of cheese:

Then, added shirimp on top, and then pushed down into grits after that:

Then added cheese on top, and back on Egg for 15 minutes at 450.  Came out quite good I thought, sorry no plated pics:

    @blue--may be on to cooking pizzas by that time, will have to see.

    @JRWhitee--feel free to wear your gamecock shirt, unless your ribs hurt or something and would be unduly aggravated, I mean you don't have to wear it, it just depends on how you feel on Saturday, you might feel like wearing it and you might not, and if you don't feel up to it, someone else will step up behind you and wear theirs (sorry, just couldn't resist that one after Clowney's stunt saturday and Spurrier's comments)

    I hear you, paying out of state tuition I have to support the team. I went to my first game Saturday and was disappointed as well. See you this weekend, we can swap shrimp and grits for brisket chili.
