Big Green Egg - EGGhead Forum - The Ultimate Cooking Experience...
We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. We especially love these Beer Pork Tenderloin and Ground Beef Acorn Squash recipes! Fall is upon us, and it's a great time for getting out to one of the many #EGGfests around the country - see a list here

I have a brother-in-law that is a welder. He cut a steel for my large 16" by 1/4 . I seasoned it and wanted to try my signature dish....quesadillas! I seasoned the chicken and cooked it. Next I assembled the Quesadillas. I have been perfecting these for years. I use Monterey Jack cheese, real bacon bits, green onions , and tomatoes. I have learned to melt Crisco then let the tortillas cook in it ,for a flaky texture. The steel did great, no sticking. It being a home made one I wondered if food would stick. These turned out great! imageimageimageimageimage
