Oh the Cajun spatchcock I did with Cajun Injector Creole Butter and swamp venom/dizzy dust rub.

It was a huge success with the friends and SWMBO. By far the best chicken I've ever cooked and probably ever had. Did some yellow squash, zucchini, red pepper, yellow pepper, purple onion, Fresno pepper medley in the CI skillet as a side.

Crazy good.
