I don't precook the veggies.
I like to elevate the pizza stone off the platesetter using the "feet" that comes with the egg. I cook pizza at 550 indirect and elevating the egg off the platesetter seems to allow the pizza stone to recover faster from one pizza to the next.
We char up veggies (peppers, zucchini, eggplant and such) direct on the Egg before (even a day before okay) to get a smoke flavore we desire. Give it a try.
