    Fries done in deep oil!  If you're going to clog those veins, you might as well go all the way

    If I am not doing a hi temp cook, I like to put the Mavrick on so I can monitor it while I am cooking in the kitchen.  If you are not familiar with that, it is a Mavrick ET-73, and you need it (at least) for long, low and slow cooks.
