We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Sausage, Beans, and Rice

This has no recipe, I make it up as I go.

Publix Italian hot sausage.  Two cans black beans, one can pinto beans, chopped chili, crushed tomato, green onions, sweet peppers, garlic, onion, salt, pepper, and a dash of dried peri-peri, bound with chicken broth.

Finely chopped onions, mixed cheese (for the spouse), and lime wedges (for me).

Thought I would show the leftovers this time.  In those you can see the sweet potatoes I forgot, so you'll see them tomorrow.  The last pic shows a lunch for me, my wife, and a lady friend who does not cook.  Even had two sausages left over for breakfast.
