goat thigh roasts in wine and lime juice, how long?

I'm going to cook two goat thigh roasts, about 2.5 lbs. each, low and slow on the egg. I'm planning on marinating them in white wine, garlic, lime juice and olive oil. How long should they marinate? I plan on putting them on late morning for an evening party. I didn't know if over night would be too long. These are young goat thighs.

    The acid from the limes can turn the surface of the meat into mush over time.  I'd say an hour would be fine.  If you have an injector, goat meat is a good candidate for using it, if you want to minimize any wild game flavors.

    Thanks for the tip! I'll marinate for an hour or two and then inject before I put them on the egg.

    Let us know how it turns out, I know it's not the same, but my buddy from Kentucky said West Kentucky BBQ is mutton.  Like to expand my list species...I'm an equal opportunity carnivore.

    I'm in Louisville and I think you're referring to Blue Moon BBQ of Owensboro, or at least that's the place that's famous for it. If I make it to the state fair I'll try some.
