I have a question abut the rules in KCBS contests. Can I trim and prep chicken off site? The only thing I have found in the rules says meat must be raw and all seasoning and cooking must be done on site. Just want to make sure I don't get a DQ in my first attempt. Thanks in advance. By the way, I haven't posted in quite a while but I read the forum often and find it a great help. Thanks to all who share advice and experiences; I've learned a lot from you.

Yes you can trim your meat prior to going to the contest and most contestants do that these days. Just package it back up in a way that they can see it and take a sniff during meat inspection to make sure you haven't brined or pre-seasoned anything.
